Kahiltna Gold Pure Organic Alaska Birch Syrup - 4 oz. "Rich and spicy sweet, with a wonderful caramel-like flavor" Pure Kahiltna Gold Birch Syrup is produced on our homestead in Alaska's Susitna Valley, the vast river valley of the Alaska Range. Each spring we collect the sap from the paper birch and evaporate it to syrup in much the same way pure maple syrup is produced. It takes approximately 100 gallons of sap to produce 1 gallon of birch syrup; maple by comparison is approximately 40:1. Fully concentrated, Kahiltna Gold pure birch syrup makes a superb ingredient in the recipes section of this web site. 8 oz. Kahiltna Gold Pure Alaska Birch Syrup, Mid Grade Our mid-grade is still sweet, but slightly darker and deeper in flavor than our first-run syrup. If you plan primarily to cook with your birch syrup, it would be a good choice for you, as it will require less syrup to get that wonderful birchy flavor! 2008 certified organic mid-grade birch syrup is still being harvested and will not be available until late May. A small quantity of 2007 harvest is still available at 2007 prices.

Wild Alaskan Birched Honey A perfect blend of our mid-grade pure birch syrup (25%) and raw Alaska Wildflower Honey (75%). The honey comes either from Palmer - the heart of Alaska's agricultural region, the Matanuska Valley - or from Delta, Alaska - where the old barley fields are now covered in fireweed. The honey is estimated to be 85-90% fireweed content. The blend of the two mellows the flavor of birch, and enhances the bouquet of the honey. That's it, pure and simple.
