Our "first run" syrup. "Rich and spicy sweet, with a wonderful caramel-like flavor" Pure Kahiltna Gold Birch Syrup - now certified organic - is produced on a Talkeetna homestead in Alaska's upper Susitna Valley, the vast river valley of the Alaska Range. Each spring we collect the sap from the paper birch and evaporate it to syrup in much the same way pure maple syrup is produced. This year 12,000 area trees were tapped to make our delicious Kahiltna Gold! It takes an average of 110 gallons of sap to produce 1 gallon of birch syrup; maple by comparison is approximately 40:1. Our Kahiltna Gold pure birch syrup makes a superb ingredient in the recipes section of this web site. It is wonderful on ice cream, in milkshakes, and coffee, and adds a divine sweetness to pancakes and waffles. First run is produced within the first week of the harvest. Following the first day of harvest (Reserve, see below) it is the lightest and sweetest of the season. Its flavor, sweetness, and color vary from year to year like fine wine, and depend very much on when the sap run begins, and the weather at the time of harvest. 2013 first run was produced in the 2nd through 9th day of harvest. It is velvety rich and sweet with a delicate complexity and fine medium amber color. Light notes of orange, walnut, and licorice.
We have reserved the syrup we made on our first day of harvest 2014 - this year April 18th, for your pleasure. The first day's production is always the sweetest and lightest of the harvest - the first sap collected from the tree is the highest in sugar content (this year 1.2%), the air and ground temperatures are cold, and there is always snow on the ground to keep that sap perfectly cold and sweet. We have heard maple folks in New England and Canada say that birch syrup is "not for pancakes". We heartily disagree. OK, Vermonters; I dare you ... put THIS on your pancakes! Very limited; available only in the fancy, but sturdy, clamp-lid bottle. Please note; this bottle will not fit into the small $6.50 flat rate box due to it's shape. A single bottle will ship by weight to your location ($10.50 to most US locations); 2 will fit into the medium flat rate box for $12 shipping, and 3 will fit in the large flat rate box for $16 shipping within the US.
Our "mid-run" birch syrup has a more complex tangy/sweetness and is somewhat darker and deeper in flavor than our first-run syrup. If you plan primarily to cook with your birch syrup, it would be a good choice for you, as it will require less syrup to get that wonderful birchy flavor! Mid run contains more minerals, and is also preferred for nutritional uses and diets. We use it primarily for birch milkshakes, coffee drinks, and salmon dishes, but, being a true birch syrup lover, I am just as likely to use it on my sourdough pancakes!
Due to consumer demand, we now have late run available! Late Run is all about the last week of harvest; it is stronger, darker, birchier - not as sweet, and highest in minerals and nutrients. Most chefs and beer brewers using our syrup use the late run. So if you are cooking, baking, or brewing with it - or using in a cleansing diet or other nutritional application - late run will work well for you; mid-run but even more so!
