A perfect blend of our mid-run organic pure birch syrup (20%) and raw Alaska Wildflower Honey (80%). The honey comes either from Palmer - the heart of Alaska's agricultural region, the Matanuska Valley - or from Delta, Alaska - where the old barley fields are now covered in fireweed. The honey is estimated to be 85-90% fireweed content. The blend of the two mellows the flavor of birch, and enhances the bouquet of the honey. That's it, pure and simple.
